    让人流口水的横县鱼生

         县鱼生算是广西一道名菜了.前几天老乡聚会,大家上馆子搓了一回,其中就有著名的横县鱼生.话说我是头一回吃,味道很不错.
          据说此菜当年有一位日本料理大师曾经慕名来华品尝,吃过后赞不绝品,称为"极品鱼生".在南宁有多间横县鱼生店,是不少南宁作为本地特色招待外地客人的首选之地。一到周末,不少人便驱车前往相熟的老店.哪个师傅手艺好,那种配料和鱼够靓,在坊间各有传闻.
          横县鱼生和日本生鱼片(也叫"刺身")不同的地方在于抓到活鱼后不经过水洗直接切片上盘,鱼身上有污垢的话就用毛巾仔细擦得干干净净,从捞出宰杀到入口,不得超过十分钟,这很考验厨师的片鱼功夫;片出来的鱼肉也不铺陈在冰块上,据说是为了保持鱼的原味,所以每道横县鱼生都是当天极为新鲜的;与鱼生搭配的配料有七八种,多的可达到二三十种,其中陈醋,香油,香菜和木瓜丝是必不可少的.我比较喜欢放青椒加木瓜,洋葱,经过腌制出来的鱼生辣中带甜,这样子会很香.让人大呼过瘾.
     
    以下为朋友推荐的市内两家做得比较好吃的横县鱼生店:1东葛路横县鱼生王:食府招牌店,不过价钱也是贵滴;2 张增鱼宫琅西店:  凭横县鱼生这个招牌菜开了不少分店,价格也适中.
           特别讲究原汁口味的,自然是要驱车前往离南宁市区一百二十多公里之外的横县县城醉仙园酒庄,里面的乐勇翠师傅做鱼生做了22年,曾经获得过传说中的"金刀奖".最最重要的是,此大厨是女的喔,牛人啊!!!  

     

    PS:无意间在网上听到这首曲子,很喜欢.作者名邓澄,是一名原创音乐者,嗯,人也长得蛮帅,编曲填词水平一流,可惜歌唱得一般,.拿手的作品是中国风和R&B.      ----------牧野苍茫(纯音乐)
